bl00m is the first concept from lowlight hospitality, the husband-and-wife team: chef chuy mejia and sam zaremba.

chuy is the chef — the one behind the pasta, the food, and the endless pursuit of making something better than the last time. sam is the creative force — bringing the brand, design, hospitality, and all the little details that make a restaurant feel like somewhere you actually want to be.

together, we created lowlight hospitality around the simple idea:

good food doesn’t have to take itself so seriously.

thoughtful food, thoughtful spaces, genuine hospitality — without all the fuss.

bl00m has an extra bit of history for us. before it was our neighborhood pasta bar, this was the building where we first met. it’s exciting to see it bl00m into something of our own.

in early 2027, lowlight hospitality will grow again as we take over the former trust kitchen next door and introduce bl00m’s sister concept, lowlight — a new restaurant and another expression of what we love about food and hospitality.
